A couple of enchiladas

Preheat your oven to 400 degrees

You will need....
Hamburger
an onion
a small can of green chilies
shredded cheese
Enchilada mix and the tomato sauce to make it
Tortillas -- I have both flour and corn


Chop the onion and cook it with the hamburger meat

Cook the enchilada sauce according to the directions on the back

Now I am making two types so I used TWO packets of mix and then then it was done I divided it. I added some of the cooked meat to this half.


Add the Chilies to the meat and onions
Now I was raised in a Mexican food restaurant and I love corn tortillas but some don't. If you are going to use corn tortillas heat them for a minute in the microwave for a minute so that they are soft and won't break. These will be just cheese so you want to put a handful of cheese on it and roll it up.


Repeat until the pan is full

Pour the meaty enchilada sauce over them all and top with shredded cheese. Put in the oven until it is all heated and melty!

Now for the other kind... these are green beef enchiladas and I usually use a different sauce but since I was making the red sauce I just used it. Add the meat mixture and cheese to the tortilla and roll it up

Alternate sauce is
1 pound of velveeta
1 can of cream of mushroom soup
1 can of evaporated milk
Melt all together and use the same as the red sauce


Repeat until pan is full

Yes there are little bits of meat in the sauce I had left over from the cheese ones and tossed it in, but usually this one would be meat free. So cover them with sauce


and cheese and into the oven til hot and bubbly.
YUM!
