Homemade Ginger snaps


3/4 cup shortening
1 cup packed brown sugar
1 egg
1/2 cup light molasses ( I used regular)
2 1/2 cups flour
1 tsp salt
2 tsp baking soda
1/2 tsp ground cloves
1 tsp cinnamon
1 tsp ground ginger

Preheat oven to 350

Cream together the shortening and brown sugar. Stir in the egg and molasses... yes it smells... you will like them I promise! ... mix well. Fold in the dry ingredients and stir. Cover and chill until firm. 1-2 hours.

Roll dough into small balls... I have a little scoop that I use... and roll them in sugar. Place on cookie sheet that is lined with parchment paper.

Bake 9-10 minutes. Leave on cookie sheet one minute until set then remove to wire racks to cool completely.
